Recipe

Makes: 16-20 meatballs

Ingredients

For the meatballs

  • 300g mince pork
  • 60g dried breadcrumbs
  • 2 tbsp olive oil
  • 300g mince beef
  • 1 free-range egg
  • Salt and pepper

For the gravy

  • 1 garlic clove
  • ½ white onion, finely chopped
  • 1 tsp fresh thyme
  • 100ml double cream
  • 1 pint beef stock
  • 150g California Prunes

Method

  1. In a bowl, mix together all the meatball ingredients and shape into meatballs (this will make 16-20 meatballs).
  2. Use an ice cream scoop to get them all the same size.
  3. Place on a baking tray and cook for 15-20 minutes at 170°C.
  4. To make the gravy, place a pan on a medium heat and cook the onions until soft along with the garlic and thyme.
  5. Pour in the beef stock and reduce by a third. Add the cream, reduce the heat and allow to simmer for a few minutes.
  6. When the meatballs are cooked, remove from the oven and add to the gravy with the California Prunes.
  7. Serve with jacket potatoes and your favourite vegetables.
