Recipe: Chicken with herby California Prune and mushroom stuffing

This delicious meal idea is a good source of protein, vitamin K and manganese. Developed by registered dietitian, nutritionist and California Prunes Ambassador Jo Travers, it’s a great way to help support your bone health as part of a balanced diet.

Ingredients
- 2 tbsp fresh thyme leaves, chopped (or 1 tbsp dried)
- 500g of chicken thighs with skin on
- 1 handful of finely chopped California Prunes
- 1 onion
- 2 tbsp fresh sage leaves, chopped (1 tbsp dried)
- 250g mushrooms
- Salt and pepper
- 1 clove of garlic, roughly chopped
Method
- Preheat the oven to 170°C.
- In a food processor, chop the mushrooms, onion and garlic then tip into a bowl with the chopped herbs and California Prunes. Season well.
- Take a chicken thigh and, using a spoon or your fingers, gently make a space between the skin and the meat. Don’t peel the skin away completely, you just want to form a kind of pouch for the stuffing.
- Gently push some of the stuffing into the pouch, covering the top of the chicken.
- Repeat with the rest of the chicken thighs until all the stuffing is used up.
- Place the chicken thighs in an oven proof dish or roasting tin and cook in the oven for 30 minutes, basting every 10 minutes or so.
- After 30 minutes, check the juices run clear by sticking a skewer or knife into the largest thigh. If not, cook for a further 5 minutes and check again.
