Makes: 1 loaf/8 slices
Prep time: 15 minutes
Cook time: 25 minutes
Ingredients
- 125g margarine or butter
- 200g granulated sugar
- 4 large eggs
- 2 passion fruits
- 80g sugar
- 125g California Prunes
- 1tsp vanilla extract
- 250g self-raising flour
- 1 lime
- ½ tbsp granulated sugar
Method
- Place the margarine and California Prunes into a food processor and blend until smooth.
- Add in the sugar and blend again.
- Add the vanilla, then crack in the eggs, one at a time, while the mixer is on full speed.
- Finally, add the flour and mix quickly making sure you don’t over mix - 10 seconds should be enough.
- Transfer the cake mixture into a 2lb loaf tin lined with baking parchment paper. Bake in a pre-heated oven at 170°C for 20-25 minutes.
- Once the cake is baked, remove from the oven and leave to cool for 10 minutes. Then, using a cocktail stick, poke holes in the top of the cake to allow the topping to soak in.
- Mix the passion fruits, lime juice and sugar in a bowl, then pour over the cake
- Scatter the ½ tbsp of sugar over the top for a nice, crackled finish and serve.
